Forms Server was just released so you won't find too many people using it yet. It can work standalone, but most who have decent-sized applications will probably use OAS. You could think of forms server as a standalone cartridge. There are a few white papers in Form Server on TechNet. There is complete OAS documentation on TechNet as well several books on the subject from Oracle Press.
