I already have the solution how to solve the problem (with thanks to good old Oracle Customer Support) how to tackle the "dedicated listener"-problem in the situation in which 2 separate instances use the same $ORACLE_HOME but have to accessed in a different way concerning security.

If all is configured correctly, you will have a situation in which can be spoken of a "dedicated listener" so additional security (via "protocol.ora" does only have effect on one of the instances & not both.
