There's really a couple of ways to do it.

If you are looking for a logical backup, you can use import/export with incremental exports. You start with a full backup and then do incrementals whenever you want. However, you must remember that import/export are real tempermental for the purposes of backup.

You could also run your database in archivelog mode and restore to a particular point in time. The tradeoff here is that you must have adequate disk space for your archivelogs.

The last way is to use a third party backup product. Oracle RMAN can do database block level incremental backups and Veritas NetBackup can do OS level incremental backups (provided you are running vxfs.)
