New Installation of Oracle -> disgarding default database

Can anybody give me a hint?
Meanwhile Oracle delivers a standard database. This works fine for many application. But I want to install my own. In which documentation I will find which kind of steps I have to do.

Therefore my special point

• Creating Database (SGA Amount)
• Creating several control-files
• Creating redo log files (size)
• Creating (automatic started) rollbacks)
• Which kind of sql-queries must run?

Thank you for any assistent. Even hints for links to oracle documations are welcome. I did look for that but I did not find that until yet.
