If you set extent sizes much smaller than the datafile, thus allowing more than one extent per datafile, the results seem to vary between versions. In earlier versions, I sometimes found multiple extents would be created in a single datafile, thus not striping. In other (later from memory) releases, it seemed some common sense was built into the database and it does stripe. I've never tested it enough to see what version did what, but it will be easy enough to test.
