Rolling upgrades of an OPS system are usually only possible in the third digit of the version number (e.g. 8.0.3 to 8.0.4). Upgrades of the OS and application are dependent on the OS and application, so I can't give you a blanket answer on this.

For load testing, there are a couple of good products out on the market for this, like Load Runner, but I'm not sure if they're designed to load test an OPS config.

If you're moving from single instance to OPS in an active-active configuration, make sure you've minimized the pinging issue.
