Exclusive is used in the world of Parallel Server, and means that only one instance can be started against the Oracle Database. If you do not have OPS installed, then Oracle always defaults to the exclusive setting.

Open means that the database is available for normal access, where as MOUNT is for Sys Admin activities, such as moving files.
