I haven't seen the books that come with O8, but with O734 there was a very useful book called something like 'Getting Started'. This summarises the create database process.
You should also have some .sql scripts buried in your oracle_home somewhere that are sample create database scripts. Just mangle them about, changing control file locations, redo log locations etc. etc.
