Grab a copy of Oracle's OFA which is a standard way of setting out your directory structure (amoung other things) to allow this. e.g.

oracle/product/7.3.4 is where 7.3.4 distribution is installed
oracle/product/8.0.5 is where 8.0.5 distribution is installed
oracle/admin/APP1 is where the dbfile, init.ora etc for APP1 is installed
oracle/admin/APP2 is where APP2's files are.

Assuming APP1 is 7.3.4 and APP2 is 8.0.5, when you set up your environment for APP1, $ORACLE_HOME will be oracle/product/7.3.4

When you set up your environment for APP2, $ORACLE_HOME will be oracle/product/8.0.5
