Oracle 7.1 DB Recovery Question

The question I have is as follows:

We have a system that consist
of Oracle 7.1 running on an Alpha 8400 with a Raid configuration.

The problem came up when a JBOD drive containing    the Roll Back and Redo Logs was pulled out while the system    was running. This was an attempt to see if a recovery could    be made with minimum down time. This did not work. The    entire raid had to be reconfigured and the database including    the Redo Logs and Rollback Segments. Thus losing the data    and several hours of up time.

Question is - how do we build the Oracle system with raid that allows

minimal system down time and complete recovery
of the DB
in case of us losing the JBOD drive ?
