In any secure system you still need to worry about users that have access like root on a UNIX system.

If you can't guarantee security for these, then don't worry about encryption, since that can be always be broken by someone. By this I mean if you can't guarantee physical security of access to your data, then encryption techniques are already compromised to a degree.
