I recommend that you get and read Cary Milsap's (Oracle) whitepaper "Oracle 7 Server Space Management". He spends a good portion of Chapter 7 dispelling the myths surrounding multiple extents and performance. In a nutshell, If planned correctly, multiple extents do not hurt performance.
