No you don't need to delete the starter database (provided you have sufficient RAM to deal with another one). You can indeed ask DBCA to create a new database. DBCA will create the service OracleService<SID> for you, the properties of the service will show Oracle is being called with the SID as parameter.
(SID is the instance identifier)
