If I have the choice I always prefer any Unix-OS. Even though the database runs stable on Win2000 at least you can administer the everything from remote on Unix which is not the case with MS OSes. Even with Terminal Servers such as the one from Microsof or Citrix you have limitations working from remote (for example a simple SQL*Plus connection via IPC to the DB just works from the console) and if the machine is placed in an other building as it is in my case you certainly need good shoes.
Also some Oracle producs (e. g. IFS 1.1.9) integrate very badly on a Win2000 Server.
