Newbie help: Import/Export caveats

Allright, so I'm new to Oracle. Please keep that in mind when answering this question, thank you.

Summary:
  I have two NT servers, both with Oracle 8i, Release 8.1.5 installed. The old server (Server1) was set up with a database before I started this job, and the new server (server2) I installed *everything* from scratch. I need to move the contents of the Server1 database to Server2, making it the primary, while retaining Server1 as a backup/testing server/database.
  I did this initially when I installed Oracle by exporting the entire database from Server1 and importing the entire thing on server2. It seemed to work fine, then. Now it is a few weeks later and data has been added to Server1. Server2, since it is not yet on-line, has been static.

Questions:
  What is the best method of importing the data that has been added in the interim?
  Should I do a full Export/Import, or is that overkill?   If I *do* do a full import, what will happen to the data that is already in ther -- does it get overwritten? Does that matter?

  I'm just being cautious, and I am hoping that some informed opinions will help me along, and I am getting next to nowhere wading through the sub-adequate documentation I have.
