SQL quoting question

Okay, one quotes an apostrophe (') with adding another one (''),

        But how does one quote an ampersand (&), and underscore (_), and a percent sign (%). So far, doubling those or adding a preceding slash (\) doesn't seem to work.

        Any ideas?
