Hi,
Best way is go for hot backup option of oracle. For that you have to set your database in archive log mode. You can check with sql dba command archive log list. Also you to set other settings like archive log destination, archive log format, automatic / manual archival etc. Recovery time depends upon what kind of recovery (full database, tablespace, datafile) you are performing. Best book on backup and recovery is by oracle press.
