Final Followup:
Oracle GRID Infrastructure 19.7 and Oracle Database 19.7 *are* supported on OL8.x.

ASM Filter Driver (AFD) and ASM Cluster Filesystem (ACFS) are *not* supported on OL8 for 19.7. (Maybe it will be there for 19.8?)

So, I guess I'm sticking w/ OL7 for now. If/when 19.8 comes out, and it supports AFD on OL8.x, I'll try to revisit this.
