For your second question, for static reports (non ad-hoc DWH queries) then you could capture those as a sqlset and transport to the new platform, if you have perfrmance problems in the new platform you can load the plans from sqlset to get the old good plan from the previous platform.

Implementing baselines (I suppose you mean SPM) in DWH is not a good or bad idea, I dont think it is even possible except for the static reports queries since most queries will be a new query for SPM and you wont able to evolve them.

For your last question, NO, dont do that. You will be tied to a statistics set which you have to evolve anyways.
