I'm pretty sure that the "best flavor" for you is something you should evaluate and decide for yourself.
An easy answer is the latest supported version of OEL.
For my shop, RHEL 6 is the right answer, but that's not something I would recommend to anyone else!
The 32<-->64 is easy ... 64-bit. There is a one-time additional step when upgrading your databases, so prepare for it (It's well documented on MOS .. one place to start is "*Changing between 32-bit and 64-bit Word Sizes [ID 62290.1]"*). Even though your OS and Oracle home are 64-bit, be aware that some OS packages must also have their 32-bit version installed.
