Would not querying the optstat_ind_hist table give you the answer? That is where dbms_stats automatically saves the current statistics before overriding them with new statistics. I haven't checked how that works in 11g when you gather stats as pending. But if that is different, i.e. the optstat hist tables get updated when pending statistics are elevated rather than when gathered, then querying the progress in the pending stats should do the trick - a variation of the dba_indexes.last_analyzed suggestion.
