I had that situation for about 10 years. What worked best for out of office coverage is if you can find a consultant that is willing to provide occasional coverage. Pay a few hours of their time to come by and understand your setup and take notes. Ensure they are able to access your systems remotely. Then when you are out of office, they are allowed to bill an hour or two per day for just being available in an emergency. If an emergency occurs, then they bill for the time they spend. If you are one of those people who like to take long vacations without a care for what happens back at work, this probably isn't the situation for you.
