Why watch from a remote camera? Just have those conversations part of the interview process and talk with the other team members about their impressions. We have not hired people specifically because we did not feel that they would fit in with the team.  

Also - most places - cameras are not illegal in public areas. Audio is a different animal.

Legal concerns aside, I would consider it highly unethical if done in secret.
