While I'm no expert at Capacity Planning, I used to work with a gentleman that was. He presented several papers on the subject. Unfortunately, he passed away too young. You might be able to find his papers by searching for Alex Vasilesco. Basically what they tell you is how to model and produce the capacity plan. No information is needed about the type of app or it's specific functions, it's all based on measurements/statistics that are collected around the application.
