I would like to amend my suggestion. I still feel Robert's book is great for learning RMAN. However, someone pointed out that if you are on 10g, there are some changes that you should be aware of. So, if you are on 10g, in addition to Robert's book, you should also get "Oracle Database 10g Insider Solutions" by John Kanagaraj. He devotes a chapter to RMAN. John participates on this list.
