Actually, it is not. SMTP server is an MTA (Mail Transfer Agent). Outlook is an MUA (Mail User Agent). The layer that frequently sits between MUA and MTA is called UTA or User Transfer Agent. That is usually a pop3 server, IMAP server, or monstrocity called simply "exchange". Both MTA and UTA are considered to be "email servers". SMTP stands for "Simple Mail Transfer Protocol" and is an email server by definition. It delivers file locally, to the filesystem (/vam/mail/$recipient is the usual place where the mail is delivered by an MTA. Now, it's taken over by a UAT on the very same machine or on a remote machine which access mail directory through some form of file sharing, typically CFS (SMB) or NFS. This layer authorizes users to access mail and give instructions to a MUA (typically outlook, but can be many things. I'm using balsa (http://balsa.gnome.org), also popular is a Mahogany client, Mozilla pop3 client, evolution, Eudora mail or Outlook. That too is considered an "email server".
