Rama's backup book has a nice explanation and some good examples, also look at:

/rdbms/product/8.1.6/rdbms/demo

AND go through this list's archives search for RMAN. There have been alot of good examples and discussions regarding this topic that I have benefitted GREATELY from.

AFAIK there are no books (other than the upcoming RMAN pocket reference from Oreilly). Oracle Documentation is comprehensive and Rama's backup & Recovery handbook also has some good details abt RMAN.
