David,

There are a number of different ways to do it. One method I use is to define the codes in the package header
  ie: FONT_COURIER10 varchar2(15) := chr(27) || '(s0p10h12vsb3T'

Then, in the package body, when I want to print a special code I either use utl_file.put() or utl_file.put_line(FONT_COURIER10 || 'Text Goes Here').
