I'll take a quick stab at that.

Denormalized refers to a schema that began it's life in a normalized state, and then thoughtful consideration was given to denormalizing parts of it to enhance performance.

Unnormalized refers to a schema to which normalization is a foreign country and it does not have a passport, and besides, all the airports and roads are closed. The unnormalized schema was thrown together in such a disorganized fashion that it could not possibly be normalized without starting over. No amount of documentation will help you to understand how it works. The only hope is to ask the duhvelopers that designed it.
