Certainly, segments can span datafiles. This happens all the time when you create a new datafile for a tablespace that is running out of room. You can easily demonstrate it on a test-bed database. Create a small tablespace. Create one table in that tablespace. Fill up the table. Add a datafile. Add more rows. Query DBA_EXTENTS.
