Is it possible to export one or more tables (and if possible the data it contains) to a .SQL text file so that i can take it home and rebuild the table structure via the SQL statements?

Im using Oracle Sql Developer for Win2K3.

You want to look at either:

1) The Export utility. This will export a table and it's contents into a DMP file that can be Imported into a different database.

2) SQL Developer or TOAD will both create table creation scripts and export data as a series of INSERT statements

3)
SELECT DBMS_METADATA.GET_DDL('<object_type>','<object_name>')
   FROM   dual;
will get you the DDL needed to create an object.
