I want to change character set from UTF8 to WE8MSWIN1252 in my database. Can anybody please tell me how to do it?

I want to do it because i migrated some code from my this database having character set UTF8 to database having character WE8MSWIN1252 and character '-' is coming like '?' I thought having different character could be the reason.
