Can any of you please tell me, which server process will read data
from the data files?

The server process that is named server process.

We want exact server process name like SMON, PMON, CKPT and so on.

But these processes are named "server process" (like others are named PMON...) just check it in the documentation I gave you.

Here is the Oracle Process Architecture Overview.

Here is the diagram showing where the shared and dedicated server processes fit into the architecture.

In a shared server configuration, these server processes are called Snnn and in a dedicated server config, they're called SHAD.
